Easy Cheesy Artichoke Dip in a Baguette

Yield: 6 servings

My mother-in-law makes the best artichoke dip with only 3 ingredients! I stuffed it into a baguette for easy eating. It makes the perfect party food, and you’ll be amazed by how good it is!

Ingredients:
1 loaf French bread (mine was about a foot long and 3″ wide)
3 tablespoons melted butter
1 cup mayonnaise
1 (8-ounce) can chopped artichokes
1 cup shredded Parmesan cheese
salt and pepper to taste

Directions:
Preheat the oven to 350 degrees F and line a baking sheet with aluminum foil. Slice the French bread lengthwise into two halves and gently tear out excess bread, forming a well down the center of each half. Brush both halves with the melted butter and place them on the prepared baking sheets. In a medium bowl, mix mayonnaise, artichokes, and cheese. Salt and pepper to taste. Fill both loaf halves with the mixture and bake for 20 minutes or until melted and browning. Serve immediately by slicing into 1-inch slices (or you can serve with buttery Club crackers, or both!)

SO EASY, SO GOOD! I fashioned this cheery Cherry Icebox Birthday “Cake” in two 2-cup apothecary jars for a cute presentation, but if you don’t have a 2-cup vessel, you can always make it in one loaf pan lined with parchment paper and, after chilling overnight, turn it out on a platter. Grab yourself a bag of the new birthday cake Oreos and enjoy!

Ingredients:
2 cups heavy whipping cream, chilled
7 tablespoons powdered sugar
2 tablespoons Kirsch (cherry flavored liqueur)*
1/2 teaspoon vanilla extract
1 package birthday cake Oreos
maraschino cherries
sprinkles (optional)
*If you don’t have any Kirsch or don’t want to use it, try subbing in 1 tablespoon maraschino cherry juice. I haven’t tried it, but I bet it’d be good.

Directions:
Whip the cream, powdered sugar, Kirsch, and vanilla extract together in a chilled bowl to stiff peaks. In two, 2-cup glasses or in one loaf pan lined with parchment paper, layer birthday cake Oreos and cherry whipped cream, starting with Oreos and ending with cream. If you want to get fancy, you could include a maraschino cherry layer! Cover and refrigerate overnight. When ready to serve, top with sprinkles and maraschino cherries!

Yield: 2 cocktails

This punchy cocktail is tangy and sweet, with a shot of Limoncello and plenty of peppy champagne! I love the fruity bits of raspberry throughout the cocktail.

Ingredients:
6 ounces raspberries, plus more for garnish
3 tablespoons sugar, divided
1 tablespoon water
2 tablespoons chilled Limoncello
1/4 cup lemon juice
1 1/2 cups chilled champagne
1 cup chilled sparkling water
ice*
lemon slices for garnish (optional)

Directions:
*Note: You can omit the ice if all your ingredients are well chilled and you don’t have an ice strainer.

Make a simple syrup: In a small saucepan, mix 1 tablespoon water and 2 tablespoons sugar over high heat until the sugar is completely dissolved and the syrup is simmering. Transfer this to another bowl and stick it in the fridge to chill.

Muddle raspberries: Put most of the raspberries (reserving just a few for garnishing your drinks) into a medium bowl with 1 tablespoon sugar. Muddle them together with a muddler or the back of a spoon until the raspberries are all broken down and combined with the sugar. Divide this mixture into the bottom of 2 tall glasses.

Finish and assemble: In a cocktail shaker, mix Limoncello, lemon juice, champagne, sparkling water, 2 tablespoons of your chilled simple syrup, and ice (if your shaker is a smaller capacity, consider mixing just one drink at a time: 1 tablespoon Limoncello, 2 tablespoons lemon juice, 3/4 cup champagne, 1/2 cup sparkling water, 1 tablespoon simple syrup, and ice for each drink). Shake well for several minutes and pour into the two glasses, straining out the ice. Garnish with lemon slices and raspberries and serve immediately.
