This dip is going to blow your mind, plain and simple. Imagine a fancy shrimp dinner replete with garlic and white wine and unicorn tears. Now imagine that dinner morphed into a dip. That is this dip. You must make it for your next party (or for dinner tonight, let's be real.)

Ingredients
  • 12 ounces (1 1/2 8-ounce packages) cream cheese, softened
  • 1/4 cup mayonnaise
  • 1/2 cup shredded Gruyere cheese, divided (I used heaping measures for cheese. Because cheese.)
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons finely chopped parsley, plus more for topping
  • 1/4 cup butter
  • 1 small shallot (or one “clove” of a big shallot), finely chopped
  • 1 tablespoon minced garlic
  • 1/2 teaspoon red pepper flakes
  • 1 pound medium fresh shrimp, peeled, deveined, and coarsely chopped
  • 1/4 cup white wine
  • 2 tablespoons lemon juice
  • 3/4 teaspoon salt and a few grinds of pepper
  • buttery crackers for serving (I used Town House Original Crackers)
Instructions
  1. Preheat the oven to 350 degrees F and grease a 2-quart baking dish. In a large, heat-proof bowl, beat together the cream cheese, mayonnaise, 1/4 cup of the Gruyere cheese, the Parmesan cheese, and the parsley.
  2. In a large skillet over medium-high heat, melt the butter. Add the shallot cook until translucent and fragrant, 1-2 minutes. Add the garlic and red pepper flakes, cooking for just about 30 seconds before adding the shrimp. Cook for 2 minutes or until the shrimp are just pink. Pour in the wine and lemon juice and stir, seasoning with salt and pepper. Bring this to a simmer and then remove it from the heat and pour it into the large bowl with the mayonnaise mixture. Mix together gently until combined. Transfer the dip into your prepared baking dish. Sprinkle it with the remaining 1/4 cup of Gruyere cheese and then bake until bubbly, about 10-12 minutes. Serve immediately with buttery crackers.

    Dear Julie, I used to love watching Bob! My kids loved it…my son was absolutely fascinated by his show when he was little. I often think back to him saying, ‘There are no mistakes. There are just happy accidents.’ He was great. Loved reading this post. and your dip looks and sounds wonderful! Is there anything better than a hot cheesy dip? I don’t think so! xo, Catherine

    My grandpa and I used to watch Bob Ross! I had no idea Bob was previous military! I absolutely loved Bob Ross. So happy and calm, just like my grandpa. You just brought back a lot of good memories for me. Thanks 🙂

    I miss Bob Ross!! I had no idea why he was so soft spoken, that was an informative tidbit. I went to a PaintNite a while back and was channeling Bob Ross. I had a great time and remembered that there were no mistakes…Thank you for the memories!
