Okay, no judging. But I asked you guys what you were eating for dinner, and while I got a few “spaghetti carbonaras” and even one full Thanksgiving-style turkey dinner (!!), I also got “leftovers,” takeout, and my personal favorite, “Thin Mints.” (I happen to know that one comes from a gal who loves fresh vegetables — even really horrible ones like celery — so I’ll let her off the hook.) But seriously, let’s chat about easy AND delicious Sunday dinners.

Lately, my dinners are frozen meals. If I’d given up freezer food for Lent, I’d have already starved. Of course I bake like a fiend all weekend, but the closest I’ve come to cooking in quite a while is making avocado toast. So I’m in no position to tell you how to live your life.

But recently I started thinking about all the easy weeknight dinners I made last year. Even though those meals were simple enough to make on a weeknight, I realized that many of them were also snazzy enough for a special Sunday dinner. And even I can manage to cook ONE night a week. I think.

    Definitely a few on here that will be up and coming for our Sunday night family dinners! BTW … that Friday night Thanksgiving dinner was positively delicious and, having been brought to us by friends (who know that Friday is my no-cooking night), it came in disposable containers and they did the dishes we ate from afterwards! (It included a scrumptious homemade pumpkin cheesecake, too!) It was quite the birthday present from them!! 🙂

    Julie, I am putting that gorgeous tabbouleh salad on my menu next week–it looks so perfect for spring! I can’t believe that I’ve never tried making it at home, especially since it has pretty much all of my favorite flavors in it… And thanks for the lovely shout out in our Foodie round up 🙂

    I usually do my big dinners on Saturdays, Sunday is just another busy day at my house (between church, lunch out, visits with family/friends) the last thing I want to do is come home and roast a chicken, LOL. But yet I do like to make one nice meal a week. But the rest of the week is fast. I would probably resort to freezer meals, too, but with two girls to feed it kind of kicks my butt into gear making healthy meals for us (mostly…)

    We made the macaroni and cheese, and it was SO yummy and ridiculously easy, even for two busy teachers with a newborn baby. The perfect comfort food treat! We like a little heat and crunch, so I did spicy Italian turkey sausage instead of breakfast sausage and then topped with panko bread crumbs for the last 10 minutes. My husband hears me talk about your tempting recipes all the time, so it always feels like a big victory when we actually cook one of them! Thanks for the lovely food and the even better stories!
