This buttery, soft, moist almond cake is perfect for eating hot straight out of the skillet with a couple of big scoops of vanilla bean ice cream! This cake is definitely for almond lovers!

Ingredients
Cake Ingredients:
  • 1/2 cup butter
  • 1/2 cup water
  • 1 1/8 cups cake flour
  • 1 cup white sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg, lightly beaten
  • 1/4 cup sour cream
  • 1/2 teaspoon almond extract
  • 3 tablespoons grated almond paste
Glaze Ingredients:
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon almond extract
  • 1/2 cup toasted almonds
  • vanilla bean ice cream (for serving)
Instructions
  1. To make the cake: Preheat the oven to 375 degrees and prepare a 10-inch oven-safe skillet sprayed with cooking spray. In a medium saucepan over medium heat, bring the butter and water to a boil. In the meantime, in a separate large bowl, whisk together the cake flour, sugar, baking soda, and salt before whisking in the egg, sour cream, almond extract, vanilla extract. Mix to combine. While mixing constantly to avoid cooking the egg, slowly pour in the boiling butter and water mixture. Add the grated almond paste. Mix to combine completely. Your batter will be very runny. Pour the batter into the prepared baking pan. Bake at 375 degrees for 17-22 minutes or until a toothpick inserted in several places comes out with a few moist crumbs.
  2. To make the glaze: Whisk together the powdered sugar, milk, and almond extract. Pour about half of the glaze over the hot cake and spread. A thin layer of glaze should cover the entire surface of the cake. Sprinkle on toasted almonds. Serve hot with vanilla bean ice cream.

    I got an industrial piercing about 12 years ago my freshman year of college and definitely agree that a good tattoo shop is best for non traditional piercings. It definitely hurt to get done but it wasn’t awful. Cool that you were able to get numbed a little! Also def yes to the saline. Just don’t overdo it either because I was very religious about it and it wasn’t healing very quickly. My friend got hers done at the same time and she didn’t fuss with it as much and hers healed a lot faster. Once I lessened how often I cleaned it, it healed fast! Guess I was irritating it by cleaning it all the time. Hope yours heals well! BTW, I’m curious to know if yours hurts to sleep on once it’s healed. Sometimes I sleep on my industrial wrong and my ear will hurt in the morning, as a result I sometimes take it out to sleep, but the real challenge is remembering to put it back in in the morning!

    I have never heard of MeVee, I will head over and check it out. This cake look delicious, I am a huge almond fan, so I could really enjoy this with a big old cup of coffee.

    My daughter (10) has already asked for cartilage piercings, ha! I’m making her wait a few years. 🙂 But I LOVE this cake. Almond is my BFF!

    Is this the one that reduces migraines or is that something else I’m thinking of (the piercing, not the cake, ha ha ha)? I only have plain old ear piercings because A. I’m old B. I’m a baby C. my ear is weird, almost a slight cauliflower ear from sleeping on one side too much as a wee little baby so when they got pierced that side took a serious hit. Had to get the earring surgically removed because it lodged right inside my lobe. I know right, total freak accident. Needless to say I’m a bit worried about more piercings. My daughter has some others, before she joined the army she was getting some piercings and tattoos. We’re going for a mother/daughter tattoo this year, something un-cheesy so we don’t look like total dorks. Okay, so now that I’ve rambled on for 3 hours….I need to look up this new social media obsession. While I make cake. And read an article on how to stop yourself from over-sharing. Ha ha ha.

    Love almond cake. My hubby is a huge almond lover. This looks delightful.

        Jean, I am sure you meant no harm with your words, but words hurt. ( I am Julie’s Mother.) I love reading her stories here and I am very proud of her. (By the number of comments on her recent blog entry a LOT of people agree with me). I have a soft heart. I pray (and cry) about people I hear on the news, often. I try to help people any time I can and to be kind to everyone. I try to learn life’s many lessons as I pass through this world. I have also tried to pass those traits onto my daughter. We enjoy reflecting, thinking things through, and trying to improve ourselves and others. We try to improve our thought processes, and the world around us in any way we can. We don’t live in bubbles! We don’t JUST cook and bake (although we enjoy food and cooking. We certainly aren’t anywhere close to perfect, but we really DO try to help people with all sorts of things. If Julie helps ONE person with her posts about the things she does in life (EVEN A PIERCING) it is worth it! If you don’t like those stories and JUST want recipes…. skip on down (to the actual recipe). But please, do not insult someone who works as hard as Julie has to give people a new, original recipe for free?? Maybe you were just having a hard day? Maybe you didn’t mean it to come across as it did? But it WAS hurtful…. 🙁 I always believe in the old saying, “If you can’t say something nice, say nothing at all”. I’m sure it was just a bad day!!

    Love your piercing! So I was completely into piercings and then I became a lawyer and removed all but my nose piercing and two pairs in my ears…. :(. The other day I looked in the mirror and felt SAD about it. The Helix was going to be my next piercing before that move! Anyway, looks great, as does this yummy hot glazed almond cake. Is it healing up? Some of my piercings, even after a year, didn’t seem to be totally healed, so curious.
