A recipe for a healthy vegan Banana Nut Crunch Smoothie with lots of protein, plus a chance to win a BlendTec Designer 725 Blender and Twister Jar!

This thick, healthy Banana Nut Crunch Smoothie is vegan, refined sugar free, and filled with protein! Best of all, it layers the flavors of roasted bananas, date paste, and toasted nuts to create a rich, delicious taste.

Ingredients
  • 2 medium, ripe bananas, sliced in thirds lengthwise
  • 2 pitted medjool dates
  • 1 teaspoon coconut oil
  • 3 tablespoons pecans, plus more for garnish
  • 3 tablespoons walnuts, plus more for garnish
  • 1 cup almond milk
  • 1/4 teaspoon vanilla extract
  • 1/2 cup quick oats
  • 4 tablespoons vegan vanilla protein powder (optional)
  • 1/4 teaspoon ground cinnamon
  • 6-8 ice cubes
Instructions
  1. Preheat the oven to 350 degrees F and line a baking sheet with parchment. Arrange the banana slices on the baking sheet. Soak the dates in 2 tablespoons of water for about 20 minutes before pureeing them with the water into a paste. I used the Blendtec Twister Jar for this because it's designed for thicker pastes. Spread the paste evenly on the banana slices and top each slice with a few dabs of the coconut oil. Bake the bananas for 15-20 minutes until fragrant. Transfer to the fridge to cool completely.
  2. Spread the walnuts and pecans out on another baking sheet and toast them in the same oven while the bananas roast. Toast them for 6-7 minutes, tossing frequently, until fragrant. Transfer to the fridge to cool completely.
  3. Assemble the smoothie by adding the liquids (almond milk and vanilla extract) to your blender jar first, followed by the solids (date roasted bananas, toasted nuts, oats, protein powder, cinnamon), and followed finally by the ice. Blend well using the Blendtec smoothie preset. Serve immediately with extra nuts for garnish.

    i would LOVE to win this! my favorite smoothie is super simple to make and tastes sooo good (to me anyways!) 1/2 banana, 1 cup frozen blueberries, 3 oz (half of container) of lemon, lime, or coconut greek yogurt, and 1/2 up skim or unsweetened almond milk. can add more milk if you like it thinner 🙂 yum!

    I would blend up high protein smoothies as I tend to always come up anemic. I would also whip up my own Gatorade drinks as I have a very hard time keeping my electrolytes at a healthy level. I’ve often had to go in the hospital for IV fluids. Gatorade helps but it is often pricy. Thanks for the chance to win a Blendtec.

    Freezing the fruit, at least the bananas, for many smoothies eliminates the need for ice, avoiding the watering down of the smoothie – never pleasant in my book.

    Another great one if frozen dark cherries, almond milk, frozen banana. Deelish.

    I have been bike commuting to the University for class and in a week I will add two more days of commuting to my placement school for my last semester of pre-teaching hours before student teaching in the spring. I’m finding I’m riding off more calories than I eat some days…

    that machine is gorgeous. i think i’d make a smoothie first, with some of the local peaches we’re getting now or a version of your banana recipe. and while i’m sipping on that, i’d look for more recipes on the internet that i could use the blender for – soups and sauces, or things for the freezer, while we can still get good local produce. thanks for the giveaway.

    I would use the Blendtec mostly for smoothies. Also, salsa, puréed foods for my son, the possibilities are endless.

    I need a blender for smoothies, guacamole, mole sauce, hummus, homemade spaghetti sauce a lot easier and anything else I can think if that needs one!

    I just threw all the ingredients in the Blendtec and let it rip! I used frozen bananas ’cause I always have them ready for smoothies. It was delish!!
