These delicious potatoes are loaded with the perfect nacho cheese, jalapeños, onions, green onions, tomatoes, avocado, sour cream, and cilantro. They're perfect for a New Year's Eve appetizer party!

Ingredients
Nacho Ingredients
  • 10-11 Tasteful Selections Honey Gold Potatoes, sliced into 1/8-inch thick rounds
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt, plus more for topping
  • 1/4 teaspoon pepper
  • 4 ounces sharp cheddar, shredded
  • 1 1/2 teaspoons cornstarch
  • 1 teaspoon hot sauce (plus more for topping)
  • 1/2 cup evaporated milk (plus more if you want thinner sauce)
Nacho Toppings:
  • chopped pickled jalapeños
  • chopped green onions
  • diced tomatoes
  • diced avocado
  • diced raw onion
  • sour cream
  • chopped cilantro
Instructions
  1. Preheat the oven to 450 degrees F. Cover two baking sheets with aluminum foil and spray the foil with cooking spray. In a medium bowl, toss the potatoes and olive oil together to coat the potatoes. Spread them in a single layer over the prepared baking sheets, being sure not to crowd them so they will brown nicely. Sprinkle salt and pepper evenly over all the potatoes. Bake them for 23-27 minutes or until golden brown, tossing once during baking. Pull the potatoes out of the oven when they're golden and let them cool while you make your cheese sauce.
  2. While the potatoes cool, toss the cheese and cornstarch together in a medium bowl. Transfer this mixture to a saucepan and add the hot sauce and 1/2 cup of the evaporated milk. Turn the heat on to medium and cook, whisking constantly, until the mixture is melted and thickened, about 5-10 minutes. Add more evaporated milk to thin to the consistency you prefer (I didn't need to add any). I actually added a little yellow food coloring, too, because I wanted my cheese to look super cheesy. Feel free to skip this if you don't care.
  3. When your cheese sauce is ready, heap the potatoes into a pile on one of the baking sheets. Drizzle them with the freshly prepared cheese sauce. Top with pickled jalapeños, tomatoes, green onions, diced avocado, onion, sour cream, and chopped cilantro. Serve immediately.

    Julie- you are too sweet! I read this to my husband just now and he laughed out loud at “one of my people”. So true. I seriously called him from Chicago that first night and told him how he should be so proud of me for making an effort and making a friend. Ha!     Wow Julie, those nachos look so good and perfect for me. I am also introverted. I attended a bloggers conference in Ashville NC. I got snubbed by a fellow blogger that I never met, but interacted through the internet. I met more friends that did not snub me and had a grand time.

    I am glad you talk about this social anxiety! I’m the same, super talkative and always ready to chat, but awkward and shy at the same time. And it does only get harder and harder as you get older.

    Regardless, I could talk about these nachos all night. Holy moly.

    Julie, you are the sweetest, most genuine person I have met this year .. loved that we got the chance to meet and I love this post .. growing up, I was chubby and shy and always felt left out. I try to make people feel comfortable and included because I was that person when I was younger who was always forgotten. I’m not completely outgoing now but I am definitely more comfortable in my skin and now that I have children, I’m trying to teach them to be open and really know people on a real level. thank you for writing such a sweet post!! Wishing you the best New Year’s Eve and so glad that you are continuing your family tradition of indulgent appetizers and playing board games .. sounds perfect to me!!     I totally know the feeling! I practically force myself to interact at conferences (then later when I’m told I’m very social, I laugh because it’s so not true). Although at my last conference when I found myself at a karaoke bar with a bunch of drunk bloggers, I high tailed it out of there #nopenopenope I think you and I will get along just fine (bonus points for these nachos!)

    I know exactly how you feel! Sometimes I can “turn it on” and be vocal/friendly/chatty but if one thing goes wrong I shut down. It sucks because I know I’m awesome (that’s ok to say that right?) but sometimes my anxiety gets the best of me. And I totally agree about Alice, she is the best! You know what else is the best? These loaded nachos. I would live off potatoes if I could 🙂

    I am extremely shy as well and I suffer from social anxiety as well. And I’m crazy awesome (totally ok to say, right?) The past few years I’ve forced myself to become more social and I’ve met some of the most amazing, generous, kind hearted people alive. Anyway, these nachos are totally my jam. I’m into over the top appetizers.
