These little Cherry Cheesecake Pie Bites aren't just adorable — they're also so delicious! The flaky pie crust surrounding creamy cheesecake and cherry pie filling will make you keep coming back for more, especially when accompanied by an almond glaze for dipping! Bonus: These are so quick and easy to make! By the way, if you love how these turn out, try keeping prepared pie dough and a block of cream cheese on hand for party emergencies — think of the possible sweet and savory combinations!

Ingredients
Cheesecake Cherry Pie Bites:
  • 2 packages (2-count) refrigerated pie crusts (4 crusts total)
  • 1 (8-ounce) Philadelphia Cream Cheese Brick, softened
  • 1/4 cup sugar
  • 1 egg, room temperature
  • 1 can cherry pie filling
  • 1 egg, lightly beaten with 1 teaspoon water for egg wash
  • Sugar for sprinkling
Almond Dipping Glaze Ingredients:
  • 1 cup powdered sugar
  • 2 tablespoons water
  • 1/2 teaspoon almond extract
Instructions
  1. Preheat the oven to 425 degrees F and line two baking sheets with parchment paper. Unroll the refrigerated pie crusts one at a time and use a 4 1/2-inch round cookie cutter to cut out as many circles as possible. (I got 5 circles from each crust, for a total of 20 circles.) Lay these out on your prepared baking sheets.
  2. In a large bowl, beat together Philadelphia Cream Cheese, sugar, and egg until smooth. Transfer this to a zip-top bag with the corner cut off. In the middle of each pie crust dough round, pipe about 1 tablespoon of cream cheese mixture. Spoon 1 or 2 cherries with sauce on top. Fold the pie dough over into an empanada shape, sealing together the edges with a fork. (Some of the filling will inevitably ooze out as you crimp, but don’t worry! They’ll still bake up super cute.) Poke a couple of small vents into each cherry pie bite with a fork, brush it with egg wash, and sprinkle it with sugar.
  3. Bake the bites for 14 to 15 minutes, or until deep golden brown. Remove to a cooling rack to cool. Whisk together the powdered sugar, water, and almond extract, and pour into a dip bowl. Serve the cooled bites and dip together.

    Starting a bookclub is daunting. I’ve been part of three, just because we move around a lot.
    The first, had the too many people invited thing happen, and that caused drama. But was wonderful once we got going.
    The second, I started, with some ladies I hardly knew, but I desperately needed friends so I took a chance.
    The third is a neighbourhood one that I thankfully feel so welcomed at (again, we moved and I needed friends).
    Anyway, I do have a point. Each book club had it’s own challenges/differences but each was marvelous in it’s own way.
    One group rotates through reading different types of material, including books, scholarly articles, reviewing TED talks, etc. Another other focused on YA fiction and we had a pact that we’d only suggest books we feel comfortable potentially having criticized. You should start one!

    Ha! I just made a blueberry galette with Philadelphia Cream filling. It’s the only brand that I buy. I am a bookaholic, but don’t have a bookclub. I use Goodreads to track all of my books, and see what the rest of my friends are reading. I love historical fiction the most. I just finished reading the sequel to “The Kitchen House’. Its about slavery and the underground railroad. Pretty heartbreaking, but a good read.

      I don’t know if these comments are still open but just in case. I’m a retired literature teacher and an absolutely voracious reader. I’ve never been in a book club but I too use Goodreads to track my books and to make a yearly personal reading challenge. I love to see what others are reading and to make myself read genres beyond my favorite, historical fiction. (Last year I read 308 books.) Between cooking, reading, dogs, and grandkids, I’m a happy camper!

    Dear Julie, I love book clubs and I organize one that meets every few months or so. We try to read books that make us think, change us. The last book we read was “Ghost Boy” by Martin Pistorius. Quite an amazing read about a man who lived as a secretly lucid vegetable (his own term) for ten years. But he was aware the whole time. What a horrific journey, and yet full of faith, hope and triumph as he eventually is able to communicate with computer software, has an incredible job and is very happily married today. He recently did a TED talk. So let’s talk cherry cheesecake pie bites. These look amazing. Perfect for book club. Or breakfast. Or a midnight snack. 🙂

    Tried this for dessert for a dinner I had.
    the only thing I changed was the cherry filling (I hate
    cherries) so I used peach filling and Apple and they turned out great love the recipe>
