We made this quick and easy dinner recipe on a weeknight. It was delicious with all the trimmings from our Fully Loaded Falafel Pitas, so I highly recommend dressing it up that way.
Serves: 4-6
Ingredients
  • 2 lemons, juiced
  • 1/2 cup plus 2 tablespoons olive oil, divided
  • 6 teaspoons minced garlic
  • 1 teaspoon kosher salt
  • 2 teaspoons freshly ground black pepper
  • 2 teaspoons ground cumin
  • 2 teaspoons paprika
  • 1/2 teaspoon turmeric
  • pinch ground cinnamon
  • red-pepper flakes, to taste
  • 2 pounds boneless, skinless chicken thighs
  • 1 large red onion, peeled and quartered
  • 2 tablespoons chopped fresh parsley
Instructions
  1. In a large bowl, whisk together the lemon juice, 1/2 cup of olive oil, garlic, salt, pepper, cumin, paprika, turmeric, cinnamon, and red pepper flakes. Add the chicken and toss to make sure it's coated well. Cover the bowl with plastic wrap and let the chicken marinate in the fridge for at least an hour or overnight (I chose overnight -- I wanted bold flavors!)
  2. Preheat the oven to 425 degrees F. Prepare a rimmed baking sheet by lining it with foil and greasing it with 1 tablespoon of the remaining olive oil. Toss the quartered onion into your marinated chicken mixture to coat it in the marinade and then place the chicken pieces and onion onto the pan. Make sure everything is spread out so it will roast nicely instead of steaming. Roast until the chicken is crisp at the edges and cooked, 30 to 40 minutes. Allow the chicken to rest for 5 minutes after removing it from the oven before slicing it into thin slices.
  3. Heat the last tablespoon of olive oil in a large skillet over high heat. When the oil is shimmering, add the chicken slices and sauté them (let them sit for about 20-30 seconds at a time to get color and then flip/stir) until they're nicely colored and curling up. Pour the chicken out onto a platter and add the onions back in. Top with parsley. Serve over rice or in a pita loaded with hummus, tahini, tomatoes, parsley, and pickled radishes.

    Can you believe I have NEVER had Shawarma! I clearly need to change that, because this sounds like dinner! Pinned!
    I can’t say I’ve fostered a rescue dog. But this post has got me thinking my dog might need a friend!

    Thank you for such a great post about fostering. I have fostered for over 6 years now and helped save about 60 dogs and puppies! Met incredibly nice and caring people too!

    We recently brought a li’l black terrier muff home from a shelter and he is the smartest, cutest, sweetest addition to our family!

    Everything I’ve made from your recipes has turned out great. One of my old favs is your mom’s quick apple kuchen. I made that for breakfast around Xmas last year and everyone loved it.
    That would be the best dessert tonight, after this yummy shawerma!

    This was really good! I marinated overnight but ended up not frying after baking because the chicken was already crispy on the bottom.
