Recipe for Four-Ingredient Protein Pancakes from Willow Bird Baking
Four-Ingredient Protein Pancakes

Okay, I did it. I went to a hot yoga class.

Some context: I’m trying to be healthier. I’m trying to get more fruits and veggies in my diet, trying to exercise more often and in different ways. So when this coupon popped into my inbox for hot yoga classes, I bought it.

And then I realized just buying it doesn’t actually do anything. You actually have to go to the class or whatever. Oh.

Recipe for Four-Ingredient Protein Pancakes from Willow Bird Baking

But yesterday, after hemming and hawing about it for days on Facebook, I finally did it! (My Facebook friends will probably be relieved to hear this news. Or they will not care at all, just like they didn’t care about my 800 anxious yoga posts, and could I please stop talking about yoga already, and also who am I? Did we go to high school together or something? Ah, Facebook.) Anyway, I don’t even really get what I did, but I did it! Here’s how it went down:

I got there super early so I could ask a billion questions and scope out the space. This was a good idea, because otherwise I might’ve missed the cubbies and the posted expectations (for instance, no talking in the yoga room). Two girls apparently had this exact problem, since they conducted a loud conversation right behind someone who was clearly trying to zen out. Gauche, ladies. Real gauche. (Read this as: I had to find some way to feel superior, since I was about to discover my very limited talents in plenty of other areas. Like bending and flexing and . . . breathing.)

Thankfully, my friends had coached me to buy a hot yoga towel. I saw other folks using regular towels and that probably would’ve been okay, but hot yoga towels are designed specifically to get more grippy when they’re wet instead of less. Nobody wants to fall on their face in the middle of their first hot yoga class.

I was also glad I brought a hand towel, because dripping all over the place during a camel pose or a wombat pose or whatever (I’m making all of this up. I have no idea.) gets distracting.

Once I was finally settled into the room for class (with my hot yoga towel covering my mat and my giant water bottle by my side) I got the impression that it wasn’t going to be as tropical as I had imagined. It was actually pretty relaxing, loungin’ in Shavasana, centering my awareness or dreaming about lunch or whatever I was doing. But (you might already guess what’s coming) that all changed once we actually had to move.

I started with the beginner class, but oh man. Holding chair pose (that’s probably not its real name) with no actual chair in the vicinity and no indication of when couch potato pose or dessert pose or something more palatable might be coming? All while perspiring profusely? Turns out that’s hard.

I at least attempted every pose (and only almost fell into my neighbor once.) And you know, I’m not sure what hot yoga is even for, exactly — why doesn’t someone open a window, again? what does emulating a rocking horse do for me? — but it was a nice experience! I felt rejuvenated and strong and more . . . bendy.

I don’t believe in “releasing toxins” besides what my liver and kidneys already do, but my skin did look all glowy and nice afterward, so that’s cool. But my most important accomplishment was challenging my body. And not challenging it like I do with the intensity of a frenetic Zumba class, which I also love, but in the strange, comforting, peaceful way yoga does. And in a really hot room.

So there you have it: my hot yoga experience! Have you ever tried it? Tell me all about it. What’d you think?

And while I’m sharing that part of my health journey, here’s another: a super quick and healthy snack that takes just a few ingredients to prepare. You can actually make these Four-Ingredient Protein Pancakes with just a banana and eggs, but I used Our Best Bites’ adaptation of adding baking powder. I also added some whey protein just to pump up the health factor a little more. They’re not exactly like real pancakes — they’re more crêpey — but they’re a healthier everyday option.

If you’re looking for other healthy pancake options in addition to these Four-Ingredient Protein Pancakes, also check out my Five-Ingredient Pumpkin Protein Pancakes that are low-carb, gluten free, refined sugar free, and delicious. Enjoy!

Unbelievable. These little "pancakes" can be made with just two ingredients, but I've added some baking powder and whey protein in this recipe. They're a super quick and healthy breakfast or snack. They come out with almost a crêpe texture. You can add vanilla extract, cinnamon, cardamom -- whatever you want! You can also ditch the protein if you're not looking to supplement yours. Each pancake is just around 30 calories!
Author:
Serves: 9-10 3-inch pancakes
Ingredients
  • 1 large banana (it should yield about 1/3 - 1/2 cup, mashed)
  • 2 eggs
  • 1/8 teaspoon baking powder (optional but recommended)
  • 2 tablespoons vanilla whey protein powder (optional; you can also add a touch of vanilla extract instead)
Instructions
  1. Place a medium skillet over medium heat on the stove. Let it heat up while you prepare the pancakes. It's ready when water dropped into the pan sizzles.
  2. To prepare the pancakes, mash the banana well with a couple of forks. Add the eggs, baking powder, and protein powder (if using) and whisk until well combined. Spray the skillet with nonstick cooking spray before adding in 2-3 tablespoons of the pancake mixture (I used a sprayed metal ring to make mine so round -- if you don't want to bother, they'll just be a little wonky shaped.)
  3. Let the pancakes cook for 25-30 seconds before flipping and letting the other side cook for the same amount of time. Remove to a plate and serve with nut butter, sugar-free syrup, butter, fruit, or whatever you'd like!

Oh this is hilarious! I have never enjoyed yoga. My friend thinks I should try hot yoga but I keep avoiding it. Chair pose is hard enough in an air conditioned room! However, you did give me an idea. One of the reasons I don’t like yoga is that my hands sweat and things start slipping. Maybe I need a hot yoga mat.

Your post made me chuckle. I also hate regular yoga, but I was convinced to try hot yoga (which I wasn’t keen on at all, but it was a boy I liked lol. Anyway, now I love it. The yoga towel over the mat makes 100% difference. Make sure its not a regular towel they stretch and are a nightmare.

I am way too unbendy and uncoordinated to have jumped into a hot yoga class where everyone knew what was going on except me. Brava! Thank goodness I started when my instructor was just learning herself. Now I need to figure out why we never do the couch potato pose–I think I could master that in an instant. But first I need some pancakes!

    Hi

These pancakes sound so yummy! And I just bought a new brand of protein which is super delicious so I am really excited to try these out!

Do you think you could sub one of the whole eggs, say for 2-3 egg whites instead. Or would that be too runny?

Also could you blend all the ingredients as opposed to mashing and whisking (lazy chef life lol).

    Thanks!

I’m sorry to hear that. They are enjoyed by my family and others, so do you think something could’ve gone wrong? I’m happy to help you troubleshoot the issue. I will say that with just a few flavors (banana, protein powder), you must like each one to enjoy these. For instance, someone who doesn’t like bananas might not enjoy the taste.

Taste is not bad, but basically I got scrambled eggs with banana with slight vanilla flavour.. Those are not pancakes, because there is nothing to hold it together, they fall apart as soon as you try to flip them. It looks like scrambled eggs, tastes like eggs with banana. Sorry…

Biba, they certainly taste different than regular pancakes, but I think if you’re getting “scrambled eggs with banana,” you might want to try mixing more. Hope that works out for you.

For the 2 tablespoons of whey, is that in proportion to the scooper? Or did you use a normal tablespoon? Did you level the scoop or compress it? Thank you

I made these and they turned out really good. I used:
    1 large banana medium ripe
    2 eggs
    Large handful of oatmeal
    2 tbsp vanilla protein powder
    Capfull of vanilla
    Pinch of salt
    2 shakes of cinnamon

    Mixed ingredients w a fork
    Sprayed pan w cooking spray
    Made silver dollar sized pancakes
They flipped over easily … I Cooked about 45 min on each side.
    Thanks ☺

What is the nutritional info on these? How many grams of protein in each pancake and how many carbs? You only mentioned how many calories.

I’d use SparkNotes recipe nutrition calculator to find out this information.

Awesome recipe! They taste amazing. I do have one question though.

What’s the key for them to be easier to turn? My first couple of tries were rough… I mixed everthing very well… maybe I should leave the mix a little more thick so it won’t crumble? I used the same ingredients you put here except the whey.

I would appreciate your help 🙂

      Hi Daemon,

My best tip is to keep them small — mine are 3-inches in diameter, so the whole spatula fits underneath them. Then really let them cook on the first side until they are bubbly so that you assure the first side is pretty solidly cooked. Mixing them well is also key, so I wouldn’t try to leave it with chunks. I hope that helps! So glad you enjoyed them.

You’re right, I probably did mine too big, the spatula didn’t fit very well so it just crumbled. I’ll definitely try a smaller one next time.

        Thanks for the tip!

How long will it last in the freezer as a meal prep?

Unfortunately I don’t think these would freeze well. They’re very delicate.

Have you ever made the batter ahead of time and uses it later? I’m looking for something protein packed and filling to carry into a yurt and it would be nice to pre-mix everything and just put it in a poor container and carry it in 🙂

I’ve never tried it so I’m not sure how it will work! If you do try, let us know how it goes!

I’m fasting this month so this is a great recipe for me. Any idea on how to thicken up the batter. Mine tasted good but were falling apart. Also, is it better to cook on medium heat? Thanks!

That might work — I also keep them very small (3 inches diameter) so they’re easy to turn because the whole spatula fits under.

These were basically banana flavored scrambled eggs.

I just made these for dinner last night to fix a craving. I loved them! The texture is surprisingly perfect. I used protein powder, and can’t imagine how they’d turn out without it. With it, they were perfect! I need to go buy more bananas and let them get super ripe so I can do it again! (Confession: I ate them all myself. )

The ripeness of the bananas could be the issue for some people. I think the more ripe the banana, the less resistant starch it has to hold the pancake together.

Bananas are not low carb just for anyone on an Atkins diet

People count their total number of net carbs, and “low-carb” is relative depending on their needs.

Next time I will use a mixer or blender to get them smoother. I did find the texture to be very eggy. Mainly I am looking for high protein breakfasts so want to give these another try. This is the nutrition information, thought I would share since others also asked about it. 341 calories 33 g carbs 11 g fat 32 g protein 18 g sugar
